Not a recipe as much as an idea - soft tortillas, filled with spiced pork tenderloin, softened peppers and onion, a wonderful guacamole, pickled red onion, grated cheese, and sour cream.

Some say he’s half man half fish, others say he’s more of a seventy/thirty split. Either way he’s a fishy bastard.
